Sun-dried Tomato & Spinach Pasta

This easy and flavourful Sun-dried Tomato & Spinach Pasta with feta cheese takes no time at all to cook and will soon be a staple weeknight favourite!

I love love love easy recipes, especially dinner recipes that can be made quickly during a weeknight. This Sun-dried Tomato & Spinach Pasta is perfect because all you really need to wait for are your noodles to boil. The ‘sauce’ itself, made up of just sun-dried tomatoes, olive oil, garlic and spinach, takes no time at all.

This is definitely more of a ‘garlic and oil’ based pasta, vs. a thick or creamy sauce. It’s a nice change from spaghetti!

How to Make Sun-dried Tomato & Spinach Pasta

For this recipe you’ll need:

  • fusilli pasta (I like to use brown rice pasta)
  • sun-dried tomatoes (I buy mine in a jar with oil)
  • olive oil
  • baby spinach, or other leafy green of choice
  • garlic
  • salt and pepper
  • crumbled feta cheese for topping
  • hemp seeds for extra protein (optional)

Start by cooking your pasta per package directions. While it’s cooking, sauté the minced garlic in olive oil over medium-high heat. Add in the spinach and mix until wilted. Then add in the sun-dried tomatoes, salt, and pepper. Stir. Let it cook for 5-10 minutes. Once pasta is cooked, strain then stir together with sun-dried tomato mixture. Serve with crumbled feta on top!

Ingredients

  • 4 cups uncooked fusilli pasta
  • 1/2 cup sun-dried tomatoes, julienned (I buy mine in a jar with oil and strain them before use)
  • 2 large handfuls of baby spinach (or 2 cups chopped kale or other leafy green)
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp salt and pepper, or to taste
  • optional: 3-4 tbsp hemp seeds for extra protein

For topping

  • crumbled feta cheese for topping

Instructions

  1. Start by cooking your pasta per package directions.

  2. While pasta is cooking, sauté the minced garlic in olive oil over medium-high heat. Add in the spinach and mix until wilted. Then add in the sun-dried tomatoes, salt, and pepper. Stir. Let cook for 5-10 minutes.

  3. Once pasta is cooked, strain, then add to sun-dried tomato mixture and stir well. If adding hemp seeds (optional), you can stir them in now.

  4. Serve with crumbled feta on top!
