Did you know beets are excellent for the liver? This Kale Beet Detox Salad is full of detox-goodness from shredded beet, fresh greens, and hearty nuts and seeds.
This Kale Beet Salad is another one of my detox salads that I shared in my recent video on 3 Delicious Detox Salad Recipes. It’s so good and so hearty, and I love the combination of crunchy seeds, creamy avocado and the zesty ginger dijon dressing.
Kale Beet Detox Salad
Ingredients
- 3-4 kale leaves, torn into pieces
- 1 small beet, grated
- 1 small pear, diced
- 1/2 avocado, diced
- 1/4 cup pumpkin seeds
- 1/4 cup slivered almonds
- 1/2 tsp olive oil
Ginger Dijon Dressing
- 1 tbsp dijon mustard
- 1 tbsp balsamic or apple cider vinegar
- 2-3 tbsp olive oil
- 1 inch-piece fresh ginger, peeled and minced
Instructions

In medium bowl, add torn kale leaves. Drizzle 1/2 tsp olive oil and massage kale with hands until dark green and a little limp (this breaks down the tough fibre of kale).

Top with shredded beets, pear, avocado, pumpkin seeds and almonds.

In separate, small bowl, whisk all ingredients for dressing until smooth.

Drizzle on top of salad and enjoy immediately.

Hi Meghan, I want to try the kale/beet salad but first I have two questions. Can spinach be substituted for the kale? Or maybe half kale and spinach. I’m not particularly fond of kale. And also, are the beets raw or cooked. Looking at the video it looks raw. Thanks, Kathy
Hi Kathy! You can definitely use spinach if you prefer (in terms of “detox”, kale is used for the salad – but spinach is fabulous also!) The beets are grated raw, but you could also cook them and chop them up instead 🙂
