I was feeling a little uninspired with breakfast recently. Sometimes I go through phases where I can't stop making the same few things in the morning because they're so darn good (like avocado toast or a smoothie), and other times I've got nothin'.

Last week I made some stewed apples to go with my oatmeal and it was the best thing, especially when I added almond butter to the mix. The perfect cozy breakfast for a chilly fall morning.

These Stewed Almond Butter Apples are really easy to make. They're creamy, warm, and the perfect addition to your morning porridge, enjoyed with ice cream, or even just on their own.

How to Make Stewed Almond Butter Apples

To make this easy recipe, you'll need:

  • Apples

  • Cinnamon

  • Coconut oil or butter

  • Almond butter

  • Maple syrup

  • Sea salt

  • Water

Start by chopping up your apples into bite-sized chunks. Add to a pan with water, oil or butter, cinnamon and sea salt and let steam away until softened over medium heat. This will take about 5 minutes or so. We want them to be soft, but not mushy. Then, stir in maple syrup and almond butter until creamy. Remove from heat and enjoy right away.

Do You Have to Use Almond Butter?

The almond butter makes these stewed apples rich and creamy and adds a boost of healthy fats, but you can make this recipe without the almond butter. Or, use another nut/seed butter of choice such as sunflower seed butter or peanut butter.

How to Use Stewed Almond Butter Apples

These stewed apples are fantastic in oatmeal, with granola, on their own, or enjoy them with ice cream. Get creative and add them to whichever food you think they'd taste great with!

Ingredients

  • 2 large apples of choice (I like Honeycrisp or Gala)

  • 1 tsp coconut oil or butter

  • 2 tbsp unsweetened almond butter

  • 1 tbsp maple syrup

  • 1/4 tsp cinnamon

  • pinch sea salt

  • 1/4 cup water

Instructions

  1. Start by chopping up your apples into bite-sized chunks. Add to a pan with water, oil or butter, cinnamon, and sea salt and let steam away until softened over medium heat. This will take about 5 minutes or so. We want them to be soft, but not mushy.

  2. Stir in maple syrup and almond butter until creamy. Remove from heat and enjoy right away.

  3. Store leftovers in airtight container or jar in fridge for up to 3 days or freeze for longer.
