Winter Chicken & Rice Stew

A simple, comforting stew with hearty vegetables and chicken.

Ingredients

  • 2 chicken breasts
  • 2 large carrots, diced
  • 3-4 large kale leaves, loosely chopped
  • 1.5 cups green beans, ends trimmed
  • 1/3 cup rice
  • 1-2 cloves garlic, minced
  • 2 tbsp dried basil
  • 2 tbsp dried parsley
  • 3 cups water or just enough to cover all ingredients in pot
  • salt and pepper to taste

Instructions

  1. Chop up all veggies and add all ingredients into pot.

  2. Bring to boil and then reduce to simmer (medium-low), allowing to cook for about 45 minutes.

  3. Once cooked and rice has absorbed water to thicken into a stew, shred apart chicken breast and stir.

  4. Serve with cracked black pepper on top!
