Lemon Cranberry Date Balls

Makes 12


  • 1 cup shredded coconut
  • 1 cup medjool dates (pitted and soaked for 1-2 mins in warm water)
  • 1/4 cup dried cranberries
  • 1/4 tsp sea salt
  • 1 tsp lemon zest
  • squeeze of 1/2 lemon


  1. Add coconut and salt to food processor and process until coconut is finely ground, but not quite a flour.

  2. Add cranberries and process further until small pieces. Add lemon zest, lemon juice, and medjool dates and process approximately 10 seconds until dough is formed. Do not over process or you will create a paste.

  3. Form into balls. Store in refrigerator to keep firm. Enjoy!
