Ingredients

For the filling

  • 4 cups fresh or frozen mixed berries (strawberries, blueberries, raspberries)

For the topping

  • 1 cup quick oats
  • 1/2 cup oat flour (if gluten-free) or spelt flour
  • 1/3 cup brown sugar or coconut sugar
  • 1/2 cup butter or coconut oil, softened
  • pinch sea salt

Instructions

  1. Preheat oven to 375F.

  2. Add berries to oven safe dish and set aside. If some berries are too large, such as whole strawberries, slice before adding.

NOTE: I use a smaller 7x9 dish. If you have a much larger dish, you may want to double this recipe.

  3. In medium sized bowl, mix together oats, flour, sugar, and sea salt.

  4. Add in softened butter and in pressing motions, mix until the butter helps to form a beady, chunky texture. This can take a few minutes! Avoid trying to combine it like a cookie dough or muffin batter; instead allow it to remain chunky.

*If mixture is too dry, add an extra spoonful of butter. If mixture is too soft, add an extra spoonful of flour or oats.

  5. Add mixture on top of berries in dish and press down gently.

  6. Bake for 35-40 minutes, until the top is golden brown and the berries are bubbling away.

  7. Let cool and serve!
