Tomato & Olive Bruschetta

A simple bruschetta with fresh tomatoes and basil, balsamic vinegar, and savoury kalamata olives.

Ingredients

  • 4 medium-sized tomatoes, diced
  • 1/2 cup fresh basil, finely chopped
  • 1/2 cup kalamata olives, chopped
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt & pepper to taste

Instructions

  1. Chop up all fresh ingredients and add to bowl.

  2. Add in remaining olive oil, balsamic vinegar, salt and pepper and stir well until thoroughly mixed.

  3. Serve right away and store leftovers in airtight container in refrigerator for up to 3 days.
