Mini Mason Jar Greek Salad

A quick and easy Greek Mason Jar Salad for easy snacking on-the-go or a side dish with dinner.

Prep Time 10 minutes

Ingredients

For the salad

  • 5 baby tomatoes, diced
  • 1/4 cup kalamata olives, chopped
  • 1/2 cucumber, diced
  • 1/2 yellow bell pepper, diced
  • 1/4 small red onion, diced

For the dressing

  • 4 tbsp olive oil
  • 4 tbsp apple cider vinegar
  • 2 tsp maple syrup
  • 1 tsp dried oregano
  • pinch sea salt and black pepper

Instructions

  1. Add dressing ingredients to mason jar, tighten lid, and shake until combined.

  2. Dice up all veggies into small pieces and add to jar.

  3. Shake a second time until all veggies are evenly coated.

  4. Eat straight out of jar! Store in refrigerator for 3 days.

Recipe Notes

Optional: add feta cheese

You can make a large batch of this recipe by doubling or tripling the ingredients and storing in multiple mason jars for a few days in the refrigerator for easy snacks.
