Strawberry Chia Pudding

Whip up this rich and fruity Strawberry Chia Pudding made with coconut milk and berries for breakfast, dessert, or a snack.

Another instalment of the chia pudding recipes I’m sharing this week: Strawberry Chia Pudding! This one tastes so similar to a strawberry ice-cream (at least I think so).

Now, I’ve made this chia pudding tons of times using strawberries as my berry of choice, but really, you can use whichever berries you like: raspberries, blueberries, blackberries, even a combination of a few.

Strawberry Chia Pudding

A rich, fruity chia pudding made with coconut milk and berries.

Ingredients

  • 1 can coconut milk (400ml)
  • 1/4 cup chia seeds
  • 2 cups frozen or fresh strawberries (or use other berries that you like)
  • 1-2 tbsp honey
  • 1 tsp vanilla extract
  • 1/4 cup water as needed (to aid blending or for a thinner pudding)

Instructions

  1. Add all ingredients to blender and blend on high for 30-60 seconds until smooth.

  2. If mixture is too thick in blender, add 1/4 cup water.

  3. Transfer contents to container or jar and let chill in refrigerator for about an hour. Pudding will continue to thicken.

Recipe Notes

Store in fridge for up to 5 days, or freezer for a few months. If frozen, let thaw completely before enjoying.
