Valentine’s Day is just around the corner and I of course wanted to share a delightful recipe for you all to enjoy this February! Especially because I’ve been borderline obsessed with buckwheat flour lately, and I had mentioned to you all that I’d be sharing with you a buckwheat recipe 😉
These muffins are gluten-free, dairy-free, and pretty much just wonderful all around. I love making these with raspberries – hence the name – although you can use whichever berries you’d like for these muffins!

What is buckwheat?

Despite its name, buckwheat is not related whatsoever to wheat. In fact, it’s known as a “pseudograin”. Buckwheat is actually a seed in the rhubarb family! It’s a grain-free, gluten-free nutritional powerhouse that makes a wonderful flour in place of regular wheat.
Buckwheat does have its own unique flavour if you’ve not before tried it, so you will notice a bit of a “buckwheat flavour” in these muffins. But don’t fear, and instead, enjoy the process of exploring new flavours and new foods.

Raspberry Buckwheat Love Muffins

A light, gluten-free and not-too-sweet berry muffin. Perfect for a snack or even breakfast!


  • 1 cup buckwheat flour
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup nut milk hemp, almond, etc.
  • 1 banana, mashed
  • 2 eggs
  • 1.5 cups fresh or frozen raspberries, chopped
  • 2-4 tbsp maple syrup adjust to desired sweetness
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extrac


  1. Preheat oven to 350F.

  2. In small bowl, mix together dry ingredients.

  3. In separate medium-sized bowl, combine all wet ingredients.

  4. Slowly add dry ingredients into wet ingredients, stirring thoroughly until combined. Batter will be thick and quite goopy!

  5. Add about 1/4 cup batter to lined muffin pan.

  6. Bake about 20 minutes, until muffins have risen, are firm, and fork comes out clean when pierced.

  7. Let cool and enjoy!

I hope you enjoy this simple recipe as much as I do! These make great muffins as a snack or even a little breakfast treat (yep – I’m all about muffins for breakfast when the ingredients are wholesome!)
