paleo pumpkin porridge
It’s still winter, which means it’s still porridge season! Porridge has always been one of my number one favourite breakfasts, but since I’ve become less and less able to tolerate oats, I’ve had to get a little creative with the sorts of things I make in the morning. Although this pumpkin porridge tastes nothing like oatmeal, it’s still warm, hearty, and comforting on a cold February day!
 
One of my favourite things about this porridge (or any porridge I make from now on) is the use of gelatin (I use this brand here). Gelatin is an excellent source of protein and collagen, which means happy joints and happy gut health!
 
This porridge can be modified endlessly, and there are plenty of variations, so feel free to play around with the ingredients. Raisins? Berries? Pear? Oh my.

Paleo Pumpkin Porridge

Cook Time 5 minutes

Ingredients

  • 3/4 cup pumpkin puree
  • 1/4 cup shredded coconut
  • 1 banana mashed
  • 1 tbsp gelatin powder
  • 1/2 tsp cinnamon
  • 1/4 cup coconut milk
  • 1 small apple, diced optional
  • 1 tbsp nut butter of choice for serving optional

Instructions

  1. Add all ingredients to saucepan and stir to combine.

  2. Simmer over medium heat for 2 minutes.

  3. If using apple, let simmer 5 minutes and add banana during last minute.

  4. Serve warm with a splash of extra milk and a spoonful of nut butter.
