Chicken & Broccoli Gnocchi

This has become one of our favourite meals to make. It’s easy, quick, flavourful, and only requires a few simple ingredients. Enjoy this recipe on a weeknight or weekend with a glass of wine.

Sean and I have been enjoying this gnocchi dinner recipe for months now. I can’t remember what inspired me to create it, but let me tell you, it’s really tasty and satisfying, considering it’s only made with a few ingredients. I’m a fan of simple meals!

It wasn’t until sometime last year that I had potato gnocchi for the first time. I enjoyed it so much that I whipped up my own homemade batch. If you don’t know what it is, it’s basically a potato and flour mixture that you form into little dough chunks. It’s often made with wheat flour although you can make it gluten-free with rice flour, which is why I use for my homemade recipe. They’re soft and delicious with all kinds of sauces (pesto, tomato, etc.) or just simple with lemon, garlic, and olive oil like today’s recipe.

For this recipe, you’ll need:

  • Chicken breast
  • Potato gnocchi (you can use homemade gnocchi or store-bought. I often like to have a package on-hand for easy dinners like this one. The brand I like is Vita Sana which is gluten-free).
  • Broccoli (feel free to use other vegetables if you’d like, such as asparagus or zucchini)
  • Garlic
  • Olive oil
  • Lemon
  • Salt and pepper

Chicken & Broccoli Gnocchi

An easy, delicious gnocchi dinner recipe with garlic, lemon, and broccoli.

Ingredients

  • 2 – 2.5 cups (about 500g) gnocchi
  • 2 chicken breasts, sliced
  • 1 head broccoli, chopped
  • 3 garlic cloves, minced
  • 1/4 cup olive oil
  • 1 small lemon
  • 1 tsp each sea salt and pepper (or to taste)

Instructions

  1. Mince garlic and add to pan with olive oil. Sautee until fragrant.

  2. Slice chicken breast into strips and add to pan with garlic. Cook until no longer pink, about 20 minutes.

  3. Chop broccoli and add to pan with chicken. Cover with lid and let cook until broccoli is tender, about 5-10 minutes.

  4. Add gnocchi to boiling water and remove after about 3 minutes, once they begin to float. Drain and add to pan with chicken and broccoli. Stir.

  5. Stir everything together gently with salt, pepper, and a squeeze of 1/2 lemon. If mixture seems dry or sticky, add another 1-2 tbsp of olive oil.

  6. Serve with extra lemon wedges.
